We are proud of our local farmers, fishermen, hunters, cheese and wine makers. That is why we work with pure and local products: Dutch game, fresh fish from the North Sea and local vegetables in season.
We work with what nature brings us, not with industrial powders and other chemical aids from the factory.
Our chef is ambassador Chef for Good fish. This means that we work with sustainably caught fish, with respect for the fish, the fish stock and the mating season of the fish.
We love to work with vegetables. You will learn how to optimally bring out the pure flavors of the vegetables, but also how you can extract new flavors from the familiar vegetables using modern sustainable techniques.
Respect for the animal
All animals (even humans) die at some point and then have to be eaten. Eating and being eaten is the natural cycle. That is why we like to work with Dutch game. These animals have not been confined in small cages, receive no food from the other side of the world and have had the freedom to live and reproduce. So we don’t work with meat from industry.
